  • Topping:
  • 1/3 cup hollandaise sauce
  • 1/4 cup salsa
  • 1 green onion, minced
  • 2 tablespoons tomatoes,minced

How to Make

  • Step 1: In blender whip salsa and hollandaise

  • Step 2: Heat ,dont boil

  • Step 3: Meanwhile

  • Step 4: Heat butter in omelet pan

  • Step 5: Add sausage and bell pepper

  • Step 6: Cook until pepper is tender

  • Step 7: Add shellfish

  • Step 8: Cook until pink

  • Step 9: Beat egg with seasonings

  • Step 10: Pour into skillet

  • Step 11: Cook until set allowing wet eggs underneath omelet

  • Step 12: Cook until set

  • Step 13: Plate

  • Step 14: Pour warm hollandaise over folded omelet

  • Step 15: Top with tomatoes and green onion
