Ingredients

The ingredients are:
  • 6 egg whites (6 large and at room temperature)
  • 150 grams unsalted butter (melted and cooled)
  • 125 grams almond meal
  • 250 grams icing sugar (sifted and extra for dusting)
  • 100 grams plain flour (sifted)
  • 125 grams raspberries (fresh or frozen)

How to Make

  • Step 1: Preheat oven to 160C.

  • Step 2: Lightly grease a 12 hole friend tin with non-stick cooking spray.

  • Step 3: Whisk egg white, butter, almond meal, icing sugar and plain flour together in a bowl with a hand whisk until combined and then pour into the prepared tin, so that each hole is two thirds full.

  • Step 4: Place two or three raspberries on top of each friend and bake for 25 to 30 minutes or until a skewer inserted in the centre comes out clean.

  • Step 5: Leave then in the tin for 5 minutes before tipping out on a wire rack and dust the friands with icing sugar and serve warm.

  • Step 6: They are best eaten the day they are made.
