Step 1: Preheat oven to 160C.
Step 2: Lightly grease a 12 hole friend tin with non-stick cooking spray.
Step 3: Whisk egg white, butter, almond meal, icing sugar and plain flour together in a bowl with a hand whisk until combined and then pour into the prepared tin, so that each hole is two thirds full.
Step 4: Place two or three raspberries on top of each friend and bake for 25 to 30 minutes or until a skewer inserted in the centre comes out clean.
Step 5: Leave then in the tin for 5 minutes before tipping out on a wire rack and dust the friands with icing sugar and serve warm.
Step 6: They are best eaten the day they are made.
