Ingredients

The ingredients are:
  • 600 grams boneless skinless chicken thighs (fillets)
  • Salt, to taste
  • Pepper, to taste
  • 320 gram baguette bread loaf (white sliced )
  • 1/3 cup olive oil (extra virgin)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 160 grams baby spinach leaves, fresh
  • 400 grams seedless grapes (red halved, 2 cups)
  • 1 onion, small halved and thinly sliced
  • 1 cucumber, thinly sliced
  • 1/3 cup fresh peppermint leaves
  • 100 grams feta cheese ( soft feta, crumbled)

How to Make

  • Step 1: Season chicken with salt and pepper.

  • Step 2: Place bread in a single layer on an oven tray and drizzle with 1 tablespoon of the oil.

  • Step 3: Cook in a moderate oven (180C) for about 8 minutes, or until golden brown and then cool on tray.

  • Step 4: Meanwhile, heat an oiled grill plate over a medium to high heat and add chicken and cook for about 5 minutes on each side, or until cooked and then remove and stand for 5 minutes and then thickly slice.

  • Step 5: To make dressing, whisk remaining oil with vinegar and honey in a jug.

  • Step 6: To serve, combine croutons, spinach, grapes, onion, cucumber and mint on a platter and top with chicken and drizzle with dressing and sprinkle with feta.
