Step 1: Season chicken with salt and pepper.
Step 2: Place bread in a single layer on an oven tray and drizzle with 1 tablespoon of the oil.
Step 3: Cook in a moderate oven (180C) for about 8 minutes, or until golden brown and then cool on tray.
Step 4: Meanwhile, heat an oiled grill plate over a medium to high heat and add chicken and cook for about 5 minutes on each side, or until cooked and then remove and stand for 5 minutes and then thickly slice.
Step 5: To make dressing, whisk remaining oil with vinegar and honey in a jug.
Step 6: To serve, combine croutons, spinach, grapes, onion, cucumber and mint on a platter and top with chicken and drizzle with dressing and sprinkle with feta.
