  • Sauce:
  • 1 1/2 cups water
  • 3/4 cup raisins
  • 1/3 cup packed brown sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • Ham:
  • 2 tablespoons salted butter
  • 1 (12-ounce) boneless cured ham steak
  • 1/8 cup madeira
  • 1/2 cup chicken stock
  • 4 ounces button mushrooms, sliced
  • 1 tablespoon finely chopped shallots

How to Make

  • Step 1: Sauce:

  • Step 2: Bring water to a boil in a saucepan.

  • Step 3: Stir raisins into water, reduce heat to medium, and boil until very tender, about 5 minutes.

  • Step 4: Whisk brown sugar, cornstarch, and salt into raisin mixture and simmer until thickened, about 10 minutes.

  • Step 5: Ham:

  • Step 6: Melt butter

  • Step 7: Brown mushrooms and shallots

  • Step 8: Take out

  • Step 9: Brown ham

  • Step 10: Add Madeira and chicken broth simmer

  • Step 11: For 30 minutes

  • Step 12: Last 5 minutes add mushroom mixture

  • Step 13: Serve raisin sauce on side
