Step 3: Stir raisins into water, reduce heat to medium, and boil until very tender, about 5 minutes.
Step 4: Whisk brown sugar, cornstarch, and salt into raisin mixture and simmer until thickened, about 10 minutes.
Step 5: Ham:
Step 6: Melt butter
Step 7: Brown mushrooms and shallots
Step 8: Take out
Step 9: Brown ham
Step 10: Add Madeira and chicken broth simmer
Step 11: For 30 minutes
Step 12: Last 5 minutes add mushroom mixture
Step 13: Serve raisin sauce on side
