Ingredients

The ingredients are:
  • 600 grams boneless skinless chicken breast (fillets, trimmed)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • Mini tortillas, warmed to serve
  • Shredded red cabbage, to serve
  • Lime wedges, to serve
  • FOR MANGO & JALAPENO SALSA
  • 600 grams mango (large mango))
  • 1 avocado, small and chopped
  • 2 tablespoons jalapeno chillies, finely chopped and drained jalapeño chillies
  • 2 tablespoons coriander, fresh and finely chopped
  • 1 tablespoon lime juice

How to Make

  • Step 1: To make salsa, cut cheeks from mango and discard stone and using a large spoon, scoop out flesh from each cheek and then chop flesh and place in a bowl with remaining ingredients and mix well.

  • Step 2: Toss chicken with combined seasoning and oil.

  • Step 3: Heat a lightly oiled, large, non-stick frying pan over a medium to high heat and add chicken and cook for about 5 to 6 minutes on each side, or until cooked. Remove. Thinly slice.

  • Step 4: Serve chicken on tortillas with cabbage and spoon over salsa and serve with lime wedges.
