Step 1: Peel the carrots and slice them on the bias into 1 inch chunks.
Step 2: In a medium saucepan, bring salted water to a boil. Cook the carrots in the boiling water for 8 minutes, or until tender-crisp. Drain the carrots and set them aside.
Step 3: In the same saucepan, add the olive oil, honey, and chili powder. Cook and stir for 1 minute over medium heat. Add the cooked carrots back to the pan and cook for another 2 minutes, or until the carrot slices are glazed. Season with salt and pepper to taste.
