Ingredients

The ingredients are:
  • 375 grams dry penne pasta
  • 425 grams oil-packed tuna (canned and drained and flaked)
  • 60 grams baby rocket leaves
  • 250 grams cherry tomatoes (halved)
  • 1/2 cup sliced kalamata olives ( drained)
  • 3 green spring onions, thinly sliced, plus extra to garnish
  • FOR CHILLI LEMON DRESSING
  • 2 tablespoons olive oil
  • 1 red chilli, long and finely chopped
  • 2 tablespoons lemon juice

How to Make

  • Step 1: Cook pasta in a stockpot of boiling, salted water, until tender and then drain and rinse under cold water and then drain well and transfer to a large bowl.

  • Step 2: Meanwhile, to make dressing, whisk all ingredients in a jug until combined.

  • Step 3: Add tuna, rocket, tomatoes, olives and onions to pasta and then add dressing and season with salt and pepper and toss to combine.

  • Step 4: Garnish with extra spring onions.
