Ingredients

The ingredients are:
  • 3 ½ pound pork roast
  • 2 cloves garlic ,sliced
  • 2 pounds potatoes,peeled and quartered
  • 1 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoons caraway seeds
  • 4 cups sauerkraut

How to Make

  • Step 1: Cut random holes in the meat and insert one garlic sliver in each cut.

  • Step 2: Roast the meat at 350 degrees F for about 2 ½ hours or until meat is tender.

  • Step 3: Last hour add the potatoes to the pan to roast

  • Step 4: While meat roasts, mix the caraway seeds with the sauerkraut and let sit, covered, at room temperature.

  • Step 5: When meat is done, remove meat and potatoes to a warm platter and cover

  • Step 6: Pour off excess fat and add the sauerkraut to the pan.

  • Step 7: Return the pan to the oven, raise the heat to 400 degrees F, and heat through, about 10 minutes
