Ingredients

The ingredients are:
  • 1/2 cup rolled oats (traditional)
  • 1/2 cup almonds, finely chopped (kernels)
  • 1/2 cup self-raising flour
  • 1/2 cup plain flour
  • 2 tablespoons caster sugar
  • 1 teaspoon ground cinnamon
  • 1 apple, coarsely grated (large pink lady)
  • 2 eggs
  • 1/3 cup olive oil (extra virgin, light flavoured)
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries, frozen

How to Make

  • Step 1: Preheat oven to 180C/160C fan-forced.

  • Step 2: Grease a 16cm x 26cm (base) slice pan and line base and sides with baking paper, extending paper 2cm above edges of pan on all sides.

  • Step 3: Reserve 2 teaspoons each of oats and almonds and place remaining oats and almonds, flours, sugar, cinnamon and apple in a bowl and stir to combine.

  • Step 4: Lightly beat 1 egg and add oil, vanilla and lightly beaten egg and stir to combine and then fold in blueberries.

  • Step 5: Spread mixture into prepared pan and lightly beat remaining egg and then lightly brush slice with egg and sprinkle with reserved oats and almonds and bake for 30 to 35 minutes or until light golden and just firm when touched and allow to cool completely in pan.

  • Step 6: Cut slice into 16 bars. Serve.
