Ingredients

The ingredients are:
  • 1 grapefruit (red, or use 2 blood oranges)
  • 2 fennel bulb (trimmed, halved vertically and sliced into paper-thin slices)
  • 1 cup parley leaves, fresh
  • 1/4 cup peppermint leaves, fresh
  • Olive oil
  • Sea salt

How to Make

  • Step 1: Cut off the top and bottom ends of the grapefruit. stand on 1 flat side and starting at the top of the fruit, cut off al the peel and white pith, following the curve of the fruit. Working over a bowl, cut between the membranes and release eh segments and squeeze any juice into the bowl. Place segments in a separate bowl. ***this can be done one day ahead, cover juice and segments separately and chill.

  • Step 2: In a large bowl combine the fennel and herbs. Cut the grapefruit segments into 1/2 inch pieces and add to bowl; toss.

  • Step 3: Arrange salad on a platter; drizzle with oil and then the grapefruit juice. Sprinkle with sea salt flakes.
