Step 1: Put the garlic, chillies, sherry and sugar into a bowl and mix well until the sugar dissolves, Add the oil and scallops, toss together and leave to marinade for at least 30 minutes.
Step 2: Transfer the scallops to a plate using a slotted spoon, reserving the marinade.
Step 3: Heat a little olive oil in a non-stick fry pan and cook the scallops over a high heat for 1 minute on each side.
Step 4: Remove the scallops for the pan and pour in the marinade. Cook marinade over a high heat for 3 minutes, then pour the marinade over the scallops.
Step 5: Serve scallops with a crispy green salad.
