Ingredients

The ingredients are:
  • 20 grams garlic cloves, grated (4 cloves, medium)
  • 5 ounces mild chili, fresh, de-seeded and finely chopped (3 medium chilies)
  • 3 tablespoons dry sherry
  • 1 teaspoon caster sugar
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons olive oil (extra for frying)
  • 12 large (1.2 kilogram) scallops (12 scallops needed)

How to Make

  • Step 1: Put the garlic, chillies, sherry and sugar into a bowl and mix well until the sugar dissolves, Add the oil and scallops, toss together and leave to marinade for at least 30 minutes.

  • Step 2: Transfer the scallops to a plate using a slotted spoon, reserving the marinade.

  • Step 3: Heat a little olive oil in a non-stick fry pan and cook the scallops over a high heat for 1 minute on each side.

  • Step 4: Remove the scallops for the pan and pour in the marinade. Cook marinade over a high heat for 3 minutes, then pour the marinade over the scallops.

  • Step 5: Serve scallops with a crispy green salad.
