Step 1: Preheat the oven to 180C (350F) and grease a loose-bottomed 18cm round cake tin, in the range of 18-20cm round, or square will work, but any bigger and cake will be noticeably flatter or alternatively, use a 25cm tin and turn this into a slice.
Step 2: In a medium bowl, whisk the flour and baking powder together, then mix in the sugar.
Step 3: In a separate bowl, combine the milk, egg and melted butter, then add to the flour mixture.
Step 4: Make the crumble mixture by rubbing together the brown sugar, flour, butter and cinnamon with your fingers, until the mixture resembles a crumble.
Step 5: Pour the cake batter into the prepared tin, top with the diced apples and sprinkle the top with the crumble mixture.
Step 6: Bake for 35 minutes - it's a little tricky to tell when this cake is cooked as you can't really test it with a skewer because the apples get in the way - just go with your gut.
