Step 1: Place the cranberries in a wide pan and pour over the port (or red wine), Bring to a boil, cover and simmer gently for 10-15 minutes, or until the cranberries start to soften and pop. Squash the cranberries with the back of a spoon until you reach the desired consistency you like.
Step 2: Stir in the sugar a little at a time, tasting as yo go, until it has dissolved and the sugar is of the right flavour or sweetness that you desire.
Step 3: Remove from pan and serve as preferred hot or cold.
