  • 1/4 cup white wine vinegar (60 ml)
  • 1 teaspoon peppercorns (pink, lightly crushed)
  • 2 tablespoons honey
  • 1 teaspoon sea salt flakes
  • 1 fennel bulb (medium trimmed and thinly sliced using a mandolin)
  • 150 grams mayonnaise (whole-egg mayonnaise, 1/2 cup)
  • 8 (360 grams) brioche bread buns (mini brioche buns, halved and toasted, 8 mini buns specified)
  • 500 grams shrimp (cooked prawns, peeled and halved, 16 prawns specified)

How to Make

  • Step 1: Place the vinegar, peppercorn, honey and salt in a medium bowl and whisk to combine and add the fennel and toss to coat and then set aside for 5 minutes to pickle.
