The ingredients are:
  • 3/4 cup cornmeal (yellow cornmeal, feel free to substitute white or blue cornmeal)
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/2 cup milk
  • 3 tablespoons butter, melted
  • 1 pint blackberries (or boysenberries, rinsed and drained, may use different types of fresh berries depending on what is available)

How to Make

  • Step 1: In a large mixing bowl sift together the dry ingredients. In a medium bowl beat together the eggs, buttermilk, milk, and melted butter.

  • Step 2: Make a well in the dry ingredients and add the milk mixture, stirring until just combined. Carefully fold in the berries. Bake waffles in a preheated waffle iron according to the manufacturer's instructions until golden brown.

  • Step 3: Serve with maple syrup or powdered sugar and jam.
