Ingredients

The ingredients are:
  • 2 pounds pearl onions
  • 2 cups chicken stock
  • 3 tablespoons butter,melted
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/16 teaspoon nutmeg
  • 1 cup milk
  • 1/4 cup light cream
  • 1/4 teaspoon cooking sherry
  • 1/4 teaspoon worcesterhire sauce
  • 1 cup jack cheese,grated
  • 1/16 teaspoon paprika
  • 1 tablespoons parsley, minced, for garnish

How to Make

  • Step 1: Drop onions in barely boiling chicken broth for about 8 seconds, remove, and peel off skins.

  • Step 2: Return to broth and simmer until tender, about 15 minutes.

  • Step 3: Drain well and set aside.

  • Step 4: Mix rest of ingredients well in large bowl, then mix in onions.

  • Step 5: Transfer to and bake in casserole dish at 350 degrees F for 15-25 minutes until hot and bubbly.

  • Step 6: Remove and sprinkle with paprika, garnish with parsley sprigs and serve hot as side dish. S
