Ingredients

The ingredients are:
  • 24 ounce beef T-Bone Steak (I supposed I had to have a weight listed and I read they should weigh less than 24 ounces)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons butter

How to Make

  • Step 1: Place the steak on the counter for at least 30 minutes to get it to room temperature.

  • Step 2: When ready, heat a cast iron skillet on high heat for five minutes.

  • Step 3: While that is heating, get the steak ready. Rub the olive oil over both sides with your hands and then sprinkle each side with salt and pepper according to your taste.

  • Step 4: Heat the oven to 400 degrees Fahrenheit.

  • Step 5: Put the T Bone in the hot cast iron skillet. Sear on each side for 3 minutes.

  • Step 6: Coat the bottom of a shallow metal roasting pan with the butter. Take the steak out of the skillet and put into the roasting pan. Place into the oven to finish cooking.

  • Step 7: This is where you need the thermometer. THE CHART IS LISTED BELOW.

  • Step 8: When it is cooked how you want it, place the steak on a platter and let it rest for five minutes by tenting it with aluminum foil to keep warm.

  • Step 9: TEMPERATURE CHART

  • Step 10: 125 DEGREES F. RARE. Cool red throughout.

  • Step 11: 135 DEGREES F. MEDIUM RARE. Warm red center

  • Step 12: 145 DEGREES F. MEDIUM. Pink with a slightly warm center.

  • Step 13: 155 DEGREES F. MEDIUM WELL. Slightly Pink

  • Step 14: 165 DEGREES F. WELL DONE. No pink at all.
