Ingredients

The ingredients are:
  • 600 grams potatoes (10 medium desiree potatoes specified)
  • 50 grams butter, melted
  • 1/3 cup sour cream (lite sour cream specified)
  • 2 teaspoons horseradish cream
  • 50 grams baby spinach leaves
  • 1 tablespoon extra virgin olive oil
  • 200 grams sliced smoked salmon
  • Lemon wedges, to serve

How to Make

  • Step 1: Steam or microwave whole potatoes for 4-5 mins, or until par-cooked and when cool enough to handle, peel and coarsely grate and place in a bowl with butter and season well and stir to combine.

  • Step 2: Heat a non-stick frying pan on medium and divide potato mixture into 8 equal portions and shape into 8 patties and cook for 5-7 mins each side, or until crisp and golden and then drain on a paper towel.

  • Step 3: Meanwhile, mix together sour cream and horseradish cream and toss together the baby spinach and oil.

  • Step 4: Stack two rosti on each plate and top with smoked salmon and spinach and serve with sour cream mixture and lemon wedges.
