Step 1: In a small mixing bowl, beat cream cheese with an electric mixer on high speed till light and fluffy. Turn off mixer and add in 1/2 cup of the Splenda© granular sweetener and mix in on lowest speed, since it will "fly", till it's melted in. Mix in lemon zest and vanilla.
Step 2: Reserve some of the sliced strawberries for garnish. Mash the rest of them. I just use my hands, it's easier than using a fork or other utensil. I just squeeze them in my hand. Stir in remaining 1/4 cup of Splenda© sweetener until melted in.
Step 3: Fold in 1 cup of the Cool Whip© into the cream cheese mixture. Then gently fold in the mashed strawberries into that.
Step 4: In 6 parfait glasses, divide the cream cheese mixture into each of them. Add a layer of granola, then a layer of the remaining Cool Whip©, then sprinkle some more granola on top, then top with the remaining sliced strawberries. Chill in the refrigerator for 1 hour before serving.
