Step 1: Boil the carrot in a saucepan of salted water for until nearly cooked and then drain. This should take 10-12 minutes.
Step 2: Return the carrots to the saucepan with the butter, sugar and parsley and cook over a medium heat , stirring often for about 10 minutes, or until the carrots caramelize.
Step 3: Sprinkle with the parsley and serve.
