Step 1: Bring all ingredients to a boil.
Step 2: Lower heat and simmer for 15 minutes. Remove liver
Step 3: And continue to simmer stock for at least one hour, or until giblets are tender and you can pull meat from neck.
Step 4: Strain mixture.
Step 5: Remove giblets and chop, with liver, for gravy.
Step 6: They probably pulled the clove of garlic out and discarded it when straining
Step 7: Reserve stock for dressing and gravy
