Ingredients

The ingredients are:
  • 1 cup all-purpose flour
  • Dash salt
  • ¼ cup butter
  • ½ cup snipped dried apricots
  • ¾ cup packed brown sugar
  • 2 eggs
  • 1 cup chopped walnuts
  • ½ cup shredded coconut
  • 1 teaspoon vanilla
  • 2 tablespoons all-purpose flour

How to Make

  • Step 1: Preheat oven to 375F

  • Step 2: In a medium mixing bowl combine the 1 cup flour and salt.

  • Step 3: Cut in the butter until crumbly and then press into the bottom of a lightly greased 11x7x1-1/2-inch baking pan.

  • Step 4: Bake for 12 minutes.

  • Step 5: Meanwhile, in a small saucepan combine apricots and enough water to cover.

  • Step 6: Bring to boiling; reduce heat. Simmer, covered, for 10 minutes; drain.

  • Step 7: In a large mixing bowl stir together brown sugar and eggs until combined.

  • Step 8: Stir in drained apricots, the 1 cup walnuts, the coconut, and vanilla.

  • Step 9: Add the 2 tablespoons flour; stir until combined.

  • Step 10: Spread apricot mixture evenly over baked crust.

  • Step 11: Bake in the 375 degree F. oven for 15 minutes. Cool in pan on a wire rack.

  • Step 12: Drizzle with a powdered sugar icing, and cut into diamonds
