Step 1: Combine ricotta, spinach, Parmesan, pumpkin, egg, salt/pepper and nutmeg in a medium bowl; mix well, cover and refrigerate until ready to use.
Step 2: Preheat oven to 375F and spray 9x13 casserole dish with cooking spray or lightly oil.
Step 3: Cook lasagna noodles according to package directions, but slightly undercook them so they don't rip when rolling.
Step 4: Drain and rinse with cold water.
Step 5: Spread 3/4 cup marinara sauce over bottom of casserole dish.
Step 6: To assemble roll-ups, evenly spread 1/4 -1/3 cup filling over one side of each cooked noodle.
Step 7: Spoon a tablespoon or so of marinara sauce down the center over filling.
Step 8: Roll up and place seam side down in casserole dish.
Step 9: Top with remaining marinara sauce and sprinkle with mozzarella.
Step 10: Cover loosely with foil and bake for 25 minutes.
Step 11: Uncover and bake for 10 more minutes.
