Ingredients

The ingredients are:
  • 200 grams dried noodles (buckwheat or buckwheat-and-wheat noodles)
  • 1 to 2 celery sticks, finely chopped
  • 4 tablespoons spring onion greens, thinly sliced
  • 1/2 teaspoon sesame seeds (toasted)
  • FOR THE SEASONINGS
  • 1/4 teaspoon salt
  • 4 teaspoons light soy sauce
  • 2 tablespoons Chinkiang vinegar
  • 1/2 teaspoon caster sugar
  • 2 tablespoon oil ( chilli oil, plus 1 tablespoon sediment)
  • 1/4 to 1/2 teaspoon ground roasted Sichuan pepper (optional)

How to Make

  • Step 1: Boil the noodles to your liking or as per package directions.

  • Step 2: Divide all the seasonings between two bowls.

  • Step 3: When the noodles are ready, tip them into a colander and quickly rinse under the cold tap, then drain well.

  • Step 4: Divide the noodles between the bowls and mix well.

  • Step 5: Scatter over the remaining ingredients and serve.
