The ingredients are:
  • 1 pound ground beef
  • 1/2 teaspoon cajun seasoning
  • 1 cup onion, minced
  • 1/2 pound cheddar cheese, grated
  • 3 jalapenos, minced
  • 1 cup cornmeal
  • 2 eggs, beaten
  • 1 cup milk
  • 1/2 teaspoon baking soda
  • 3/4 teaspoons salt
  • 1 can (15 ounces) corn, drained
  • 1/4 cup oil

How to Make

  • Step 1: In a medium pan

  • Step 2: Cook the ground beef with 1 pepper and cajun seasoning about 10 minutes until brown.

  • Step 3: Drain and set aside.

  • Step 4: In a large mixing bowl

  • Step 5: Combine the cornmeal, baking soda, and salt.

  • Step 6: Add eggs and milk and stir until blended. Add the oil and stir well.

  • Step 7: Then add the drained corn and peppers.

  • Step 8: Grease a 9x9 casserole dish.

  • Step 9: Layer 1/2 of the cornmeal mixture on the bottom of the dish, then the browned ground meat, the uncooked onion, followed by the cheese,and top with the remaining cornmeal mixture.

  • Step 10: Bake at 425 degrees

  • Step 11: 20 minutes until brown or until toothpick comes out clean.
