Ingredients

The ingredients are:
  • 2 tablespoons olive oil (extra virgin olive oil, or butter)
  • 1 onion, chopped
  • 300 grams carrots, finely chopped in a food processor
  • 2 cups water, boiled (freshly boiled)
  • Sea salt, to taste
  • White pepper, to taste
  • Greek yoghurt, or coconut milk yoghurt, to serve

How to Make

  • Step 1: Saute onion with the olive oil or butter over a medium heat for 3 minutes until softened and then add the carrots and freshly boiled water and simmer, partially covered for 10 minutes until carrots are tender.

  • Step 2: Remove from the heat and blend until smooth and creamy adding a little extra hot water if needed and season to taste.

  • Step 3: Serve and enjoy.
