  • 2 cups eggplant,chopped
  • 2 cups tomatoes,chopped
  • 2 cups yellow squash,chopped
  • 2 cups zucchini,chopped
  • 3 tablespoons oil
  • 3 cloves garlic,smashed
  • 1 cups white onions,chopped
  • 1/2 cups fresh parsley,minced
  • 1/4 t pepper
  • 1/4 t paprika
  • 1 teaspoons celey salt

How to Make

  • Step 1: In stockpot

  • Step 2: Heat oil, add onion,eggplant and peppers and saute until soft.

  • Step 3: Add squash, zucchini and lima beans

  • Step 4: Add tomatoes and corn

  • Step 6: Until done

  • Step 7: Season with pepper, paprika.

  • Step 8: Season with celery salt to taste.

  • Step 9: Stir in the fresh parsley.
