Ingredients

The ingredients are:
  • 1/2 cup onion, chopped
  • 1 clove garlic, crushed
  • 1 tablespoon vegetable oil
  • 1 bay leaf
  • 1 pound green broccoli, chopped
  • 1/2 cup potatoes, chopped,peeled
  • 2 1/2 cups light vegetable stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 1 tablespoons fresh lemon juice
  • 1/4 cup low-fat plain yogurt

How to Make

  • Step 1: Saute onion and garlic

  • Step 2: In the oil until soft, 3 to 4 minutes.

  • Step 3: Add bay leaf, broccoli, potato, and stock. Simmer gently,

  • Step 4: Covered

  • Step 5: For about 10 minutes, until the broccoli is tender, but still bright green.

  • Step 6: Remove bay leaf and let cool.

  • Step 7: Puree in a blender (not totally smooth). Season to taste,

  • Step 8: Add lemon juice and return to pan to reheat if necessary.

  • Step 9: Add a dollop of yogurt just before serving.
