Ingredients

The ingredients are:
  • 200 grams mashed bananas (2 bananas, peeled)
  • 2 large eggs (whisked)
  • 1 teaspoon vanilla bean powder
  • 1/3 cup almond nut butter (plus extra to serve)
  • 3/4 cup flaxseed linseed (linseed, LSA mix specified)
  • 1 teaspoon baking powder
  • Chis seeds, to serve
  • Pepitas, to serve

How to Make

  • Step 1: Preheat the oven to 180C.

  • Step 2: Line 10 holes of a 12 hole - 1/3 cup capacity muffin pan with paper cases.

  • Step 3: Place all the ingredients in a bowl and mix until well combined and then divide the mixture evenly between the prepared muffin holes and then bake for 15 minutes, or until they are cooked through and golden and a skewer inserted comes out clean, the muffins are ready and if not bake for another minute or until done.

  • Step 4: Remove the muffins from the oven and leave in the pan, for 5 minutes before transferring to a wire rack to cool completely.

  • Step 5: Serve topped with extra almond butter and sprinkled with chia seeds and pepitas.
