Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 yellow onion, diced
  • 6 cloves garlic, smashed
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 4 chipotle peppers in adobo (chopped)
  • 1/2 cup orange juice
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • FOR SPICY MANGO COLESLAW
  • 2 cups cabbage, shredded (purple)
  • 1 mango, thinly sliced
  • 1 jalapeño, chopped, and seeded
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil ( extra virgin)
  • 2 tablespoons apple cider vinegar
  • 1 lime, juiced
  • Kosher salt to taste

How to Make

  • Step 1: Add chicken, onion, garlic, oregano, salt, chipotle peppers, and orange juice to slow cooker

  • Step 2: Cover and cook on LOW for 6-7 hours

  • Step 3: Once the chicken is done cooking, shred with two forks and stir in the lime juice and cilantro.

  • Step 4: To make the coleslaw, add all ingredients to a bowl and toss to combine.

  • Step 5: Serve chicken on warm tortillas topped with the coleslaw, and other topings of choice, such as shredded cheese, or slices of avacado
