Ingredients

The ingredients are:
  • FOR RICE
  • 2 cups cooked rice
  • 2 tablespoons lime juice
  • 1 tablespoon minced cilantro
  • 1/4 teaspoon salt
  • FOR BEANS
  • 1 can (15 ounce) black beans (do not drain)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt, to taste
  • Pepper, to taste
  • FOR TOPPINGS
  • 1 pound pork loin (cooked, shredded, can be substituted for beef, or chicken)
  • 1 cup Monterey Jack cheese, shredded
  • 1 avocado, peeled and diced
  • 2 bell peppers, diced
  • 1 cup whole kernel corn (drained)

How to Make

  • Rice

  • Step 1: In a bowl, combine the cooked rice, lime juice and cilantro and salt.

  • Beans

  • Step 2: In a small saucepan, combine the beans, cumin, garlic powder and onion powder.

  • Step 3: Season to taste with salt and pepper.

  • Step 4: Bring to a simmer and let cook for 5 minutes.

  • To assemble

  • Step 5: Divide rice between 4 bowls.

  • Step 6: Add 1/4 cup beans to each bowl

  • Step 7: Divide the remaining toppings among the bowls.
