  • 3 pounds potatoes, chopped (peeled)
  • 4 cups water
  • 1 can (12 ounces) evaporated milk
  • 1 pound Velveeta cheese (cubed)
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon pepper, to taste
  • 1 clove garlic, smashed, to taste
  • FOR GARNISH
  • 4 tablespoons sour cream
  • 4 tablespoons bacon, chopped (bacon bits)
  • 4 tablespoons cheddar cheese, shredded
  • 4 tablespoons green onions, chopped (green)

How to Make

  • Step 1: Wash, peel, cut potatoes in small pieces.

  • Step 2: In medium size pot, barely cover with water, boil until cooked but still firm.

  • Step 3: Add milk and cheese. Cook on low stirring constantly until cheese melts.

  • Step 4: Do not boil.

  • Step 5: Ladle into 4 serving bowls and add toppings of sour cream, bacon bits, shredded cheese, and green onion tops
