Ingredients

The ingredients are:
  • 1 1/2 cups Kellogg's Bran Buds (or can use natural bran)
  • 1 cup buttermilk
  • 1/3 cup oil (or melted butter)
  • 1 large egg
  • 3/4 cup brown sugar (can use more for a sweeter taste)
  • 1 to 2 teaspoons vanilla
  • 1 medium ripe banana, mashed with a fork
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional but good to add)
  • 1 1/2 cups raisins

How to Make

  • Step 1: Line 12 muffin tins with paper liners. Set oven rack to second-lowest position. Preheat oven to 375 degrees F.

  • Step 2: In a medium bowl combine the bran with buttermilk; allow to sit for 5-7 minutes. In another bowl whisk oil with egg, sugar and vanilla; mix in mashed banana.

  • Step 3: In a large bowl combine the flour with baking soda, baking powder, salt, cinnamon and raisins.

  • Step 4: Mix the bran mixture with the banana mixture until combined; gently mix into dry ingredients using a wooden spoon (mix just until combined, do not overmix!).

  • Step 5: Spoon into muffin tins 3/4 full. Bake for about 18-20 minutes or until muffins are done
