Step 1: Combine water and agar agar in a medium saucepan and heat over low until agar agar is completely dissolved.
Step 2: Add sugar and stir until dissolved and mixture is frothy and slightly stringy
Step 3: Remove from heat and add flavoring
Step 4: Pour the mixture into a tray (I like to use a caserole dish)
Step 5: You can use food coloring to tint the whole batch, or use a tooth pick to swirl drops of coloring though the mixture
Step 6: Chill mixture in the fridge until it has set, like firm jello
Step 7: Remove from tray and cut or tear into smaller pieces
Step 8: Let the pieces sit in an undisturbed area for three to five days to crystalize
