The ingredients are:
  • 7 ounces dry rice ( raw 1 cup)
  • 2 cups water
  • 1 package (10 ounces) frozen chopped spinach (she used 1/2 a package)
  • 1 cup onion, minced
  • 2 tablespoons butter
  • 3/4 cup Parmesan cheese, grated
  • 1 teaspoons salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Combine rice and water

  • Step 2: Simmer until done or just have 2 cups of leftover rice ready

  • Step 3: Thaw the spinach

  • Step 4: In saute pan

  • Step 5: Brown onions in butter

  • Step 6: Spray pam into 3 quart casserole

  • Step 7: Layer 1/3 of the rice spinach onions cheese

  • Step 8: Season liberally

  • Step 9: Repeat ending with cheese

  • Step 10: Bake in 350 degree oven 20 minutes until hot and bubbly
