Ingredients

The ingredients are:
  • 2 cups flour
  • 2 cups sugar
  • 2 boxes (7 ounces) coconut pudding mix (coconut cream pudding mix, 3.5 ounces each ,cooked variety)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/4 cups oil (vegetable)
  • 5 eggs
  • 1 can (15 ounces) pureed pumpkin

How to Make

  • Step 1: Heat oven to 325 degrees F.

  • Step 2: Grease and flour two 9 x 5-inch loaf pans.

  • Step 3: In a large bowl

  • Step 4: Combine flour, sugar, pudding mixes, baking soda, baking powder,pumpkin spice, salt and cinnamon.

  • Step 5: Stir in the oil, eggs and pumpkin until just blended.

  • Step 6: Stir the flour mixture into the egg mixture.

  • Step 7: Pour batter into prepared pans.

  • Step 8: Bake for 1 hour or until a wooden pick inserted into center of the loaf comes out clean.( most reviews say they hade to bake 20 minutes longer ,so be aware)

  • Step 9: Remove from oven and let stand 15 minutes

  • Step 10: Then remove from pans and let cool on wire rack.
