Step 1: Combine the ricotta, vanilla and 2 tbs agave syrup in a bowl.
Step 2: Preheat oven to 180°C.
Step 3: Place the nectarine, cut-side up, in a roasted pan and drizzle with the remaining agave syrup and roast for 25-30 mins or until tender and then set aside to cool slightly.
Step 4: Place the baguette slices on serving plates and spread evenly with the ricotta mixture and top with nectarine and sprinkle with mint to serve.
