Ingredients

The ingredients are:
  • 500 grams ricotta (smooth)
  • 1 teaspoon vanilla bean paste
  • 1/3 cup agave syrup (80ml)
  • 1 kilogram nectarines, halved (yellow, stoned Ripe about 6)
  • 75 grams baguette bread (thickly sliced diagonally and toasted 1/2 150 gram baguette)
  • Mint leaves, to serve

How to Make

  • Step 1: Combine the ricotta, vanilla and 2 tbs agave syrup in a bowl.

  • Step 2: Preheat oven to 180°C.

  • Step 3: Place the nectarine, cut-side up, in a roasted pan and drizzle with the remaining agave syrup and roast for 25-30 mins or until tender and then set aside to cool slightly.

  • Step 4: Place the baguette slices on serving plates and spread evenly with the ricotta mixture and top with nectarine and sprinkle with mint to serve.
