Ingredients

The ingredients are:
  • 500 grams broccoli
  • 1 packet (400 grams) fresh noodles (shelf-fresh wholegrain noodles)
  • 1 tablespoon oil (vegetable oil)
  • 2 carrots, peeled and cut into thin matchsticks
  • Marinade sauce (roasted garlic and soy marinade sauce, 1/2 cup)
  • 1 cup cashew nuts (unsalted and roasted)
  • 1 tablespoon sesame seeds (toasted)
  • 1 tablespoon sesame oil
  • 6 spring onions, thinly sliced.

How to Make

  • Step 1: Cut small florets from the broccoli; trim stem, halve and thinly slice.

  • Step 2: Prepare noodles according to packet directions and drain and cover to keep warm.

  • Step 3: Heat vegetable oil in a wok over a high heat until very hot and then add broccoli and carrots and stir-fry for about 3 to 5 minutes or until almost tender.

  • Step 4: Add sauce, cashews, seeds and sesame oil and stir fry until hot and then add noodles and half the onions and stir-fry until hot.

  • Step 5: Serve sprinkled with remaining onions.
