Ingredients

The ingredients are:
  • 150 grams pita breads (Greek, 2 x 26cm pita breads specified)
  • 3/4 cup hummus
  • 250 grams tomatoes, halved (cherry)
  • 1 red capsicum, cut into thin strips
  • 200 grams crumbled feta cheese (Greek)
  • 1/4 cup sliced Kalamata olives (drained)
  • 500 grams lamb souvlaki strips
  • Baby rocket leaves, to serve
  • Extra virgin olive oil, to serve

How to Make

  • Step 1: Place bread on two large oven trays and spread evenly with hummus and then top with tomato, capsicum, feta and olives.

  • Step 2: Cook in a very hot oven (220C) for about 8 minutes, or until golden and crisp.

  • Step 3: Meanwhile, heat a lightly oiled, non-stick frying pan over a medium to high heat and add lamb in two batches and cook, stirring occasionally, for about 3 minutes, or until just cooked and then remove and top pizzas evenly with lamb and rocket and drizzle with oil.

  • Step 4: TIP: Lamb souvlaki strips are marinated in garlic, lemon and herbs, available in sealed plastic bags from Coles’ refrigerated meat section. Greek pita bread is available from independent supermarkets and delicatessens
