The ingredients are:
  • 1/2 cup mayonnaise (do not use salad dressing)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 3/4 pound cooked deveined shrimp
  • 1 1/2 cups finely shredded cheddar cheese
  • 1 (4 ounce) can chopped green chilies, drained
  • 1/4 cup sliced ripe olives, finely chopped (hand squeeze out excess moisture, can use black or green olives)
  • 1 green onion, finely chopped
  • Hot sauce, optional and to taste
  • Salt and fresh ground black pepper, to taste

How to Make

  • Step 1: Prepare an ungreased baking sheet. Pat all shrimp dry as possible using paper towels, the chop the shrimp finely.

  • Step 2: In a medium bowl combine the mayonnaise with garlic powder and cumin. Mix in the chopped cooked shrimp, cheddar cheese, green chilies, olives and green onions until well combined. Add in hot sauce to taste then season with salt and pepper.

  • Step 3: Drop by spoonfuls into the tortilla scoops. Place on baking sheet. Bake at 350 degrees F for 5-10 minutes or until the cheese is melted.
