Ingredients

The ingredients are:
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • 1 pound shrimp, peeled and deveined
  • 1/2 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 2 tablespoon olive oil
  • 1/2 lime, juiced
  • Chopped, fresh cilantro
  • Diced avocado and regular or gluten-free tortillas

How to Make

  • Step 1: Preheat oven to 500°F.

  • Step 2: In small bowl, combine chili powder, garlic powder, paprika, cumin and salt.

  • Step 3: On sheet pan, toss shrimp, red onion, peppers, oil and seasoning mixture until combined. Spread in single layer on pan. Bake 8 minutes, until shrimp are tender but firm and edges of vegetables are charred.

  • Step 4: Drizzle lime juice over shrimp and vegetables, sprinkle with cilantro and serve immediate with avocado and tortillas. Refrigerate any leftover.
