Ingredients

The ingredients are:
  • 2 tablespoons red wine vinegar
  • 3 to 4 limes, juiced (1/2 cup)
  • 1 red bell pepper (large jarred roasted red pepper)
  • 1 jalapeno, diced (remove seeds for less heat)
  • 1 garlic clove, peeled and minced
  • 1/2 cup yellow onion, diced
  • 1/2 cup jerk spice
  • 1 tablespoon brown sugar
  • 1 teaspoon cumin
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup oil (vegetable oil)
  • 1 1/2 to 2 pounds beef flank steak

How to Make

  • Step 1: Place vinegar, lime juice, red pepper, jalapeno, garlic, onion, jerk spice, brown sugar, cumin, nutmeg, cinnamon and salt in blender; puree. With blender running on medium speed, slowly add oil until combined. Pour into gallon-size zip-top bag. Add flank steak and marinate 30 minutes at room temperature or up to 12 hours in refrigerator (remove from refrigerator 30 minutes before grilling).

  • Step 2: Preheat grill to medium-high heat. Remove steak from marinade and place on lightly oiled grill, cooking 4-5 minutes per side, or until steak reaches a safe internal temperature of 145°F for rare. Let steak rest 3-5 minutes. Slice thinly against grain and serve. Refrigerate any leftovers.
