Ingredients

The ingredients are:
  • 3 cups corn, frozen
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 tablespoons red bell pepper, minced
  • 4 egg yolks
  • 1/2 cup flour
  • 4 egg whites
  • 2 cups oil (vegetable oil)
  • 1 tablespoons powdered sugar
  • 6 teaspoons honey
  • 6 teaspoons maple syrup (pure)

How to Make

  • Step 1: In a mixing bowl, combine corn kernels, sugar, salt, pepper and diced red pepper.

  • Step 2: Stir in egg yolks, one at a time. Fold in flour.

  • Step 3: In another bowl beat the egg whites until stiff. Fold into the batter.

  • Step 4: In a large cast iron skillet, heat oil over medium heat

  • Step 5: Gently drop in the oil

  • Step 6: Heaping tablespoons of the batter to make around 12 fritters.

  • Step 7: Fry fritters to golden brown turning to cook evenly

  • Step 8: Allow two minutes frying time for each side so that the fritters are puffed up and cooked through

  • Step 9: Using a slotted spoon transfer onto paper towel.

  • Step 10: Drain well and serve hot.

  • Step 11: For breakfast dish

  • Step 12: Arrange in a baking sheet and dust with confectioners sugar.

  • Step 13: Glaze under hot broiler for one to two minutes

  • Step 14: And serve at once with honey or maple syrup.
