  • 3 tablespoons oil (vegetable oil)
  • 1 package (12 ounces) frozen hash brown potatoes (shredded)
  • 1/16 teaspoon cayenne pepper powder
  • 8 eggs
  • 1 can (4.5 ounce) chopped green chiles
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 ounces breakfast sausage (links, cut in 1/4-inch pieces)
  • 1 green onion, minced
  • 1 package (11 ounce) tortillas (flour tortillas for burritos)
  • 1 package (8 ounces) shredded cheese (mexican cheese blend)

How to Make

  • Step 1: In skillet, heat 2 tablespoons of the oil over medium-high heat.

  • Step 2: Add frozen hash brown potatoes in even layer, press down

  • Step 3: Sprinkle with a light dusting cayenne pepper powder

  • Step 4: Cook potatoes 7 minutes without moving.

  • Step 5: Drizzle with remaining 1 tablespoon oil, turn, then cook 6 to 8 minutes longer or until browned on both sides and hot throughout.

  • Step 6: Transfer to bowl; cover with foil to keep warm.

  • Step 7: In large bowl, beat eggs, green chiles, salt and pepper until well blended.

  • Step 8: In same skillet over medium-high heat, cook sausage minutes, stirring

  • Step 9: Add green onion

  • Step 10: Frequently, until browned.

  • Step 11: Stir in egg mixture; cook 2 to 3 minutes, stirring occasionally, until scrambled.

  • Step 12: To assemble burritos,

  • Step 13: Spoon line of hash browns down center of each tortilla.

  • Step 14: Top with cheese and egg mixture.

  • Step 15: Fold into burrito

  • Step 16: Can put in tin foil and freeze
