The ingredients are:
  • 1 can (15 ounce) black beans (drained)
  • 1 1/2 cups corn, frozen
  • 6 ounce baby spinach (fresh)
  • 6 green onions, thinly sliced
  • 1/3 cup cilantro, chopped
  • 2 teaspoons cumin
  • 3 cups pepper jack cheese, shredded
  • 1 package (8 ounces) tortillas ( 6 inch corn tortillas)
  • 2 cups enchilada sauce (red)

How to Make

  • Step 1: Saute the spinach in olive oil until slightly wilted.

  • Step 2: Heat tortillas in microwave until soft

  • Step 3: In a large bowl

  • Step 4: Combine beans, 2 cups cheese, spinach, corn, green onions, cumin, and cilantro.

  • Step 5: Preheat oven to 375°F.

  • Step 6: Lightly spray a 9x13 inch baking dish, and pour a small amount of the sauce to coat the bottom.

  • Step 7: Generously fill tortillas with mixture

  • Step 8: Roll up tightly and place seam side down in dish.

  • Step 9: Pour remaining sauce over the enchiladas,

  • Step 10: Coating evenly.

  • Step 11: Sprinkle 1 cup cheese on

  • Step 12: Top

  • Step 13: Bake 20 minutes until melty
