  • 2/3 cup sugar
  • 1/3 cup butter, soft
  • 1 teaspoons salt
  • 1 teaspoons vanilla extract
  • 3 eggs
  • 1 1/2 cups flour
  • 1 tablespoons baking powder
  • 1 1/4 cups cornmeal (blue)
  • 1 1/3 cups milk

How to Make

  • Step 1: Preheat Oven to 400°F.

  • Step 2: Lightly grease 10-1/2” cast-iron skillet and place in oven while it is preheating.

  • Step 3: In a large bowl, cream together sugar, butter

  • Step 4: Stir in eggs and mix well.

  • Step 5: Mix together flour, baking powder, & blue cornmeal and salt

  • Step 6: Alternately stir flour mixture milk with vanilla into egg mixture and beat until well-blended

  • Step 7: Bake in preheated cast-iron skillet for 25 minutes or until toothpick comes out clean
