Step 1: Place the onion and thyme in a medium saucepan over medium heat and cook, stirring, for 3 minutes and then add the stock, salt and pepper and bring to the boil.
Step 2: Preheat a grill (broiler) to high.
Step 3: Divide the soup between 4 small serving bowls.
Step 4: Top the bread with, sage and cheese and place on a tray and grill/broil for 2 minutes or until the bread is golden and the cheese is melted.
Step 5: Sprinkle with cracked black pepper to serve.
