Ingredients

The ingredients are:
  • 16 ounces dry egg noodles (whatever you have on hand or your favorite)
  • 1 onion, chopped
  • 2 tablespoons butter (or margarine)
  • 30 ounces condensed cream of chicken soup (3 cans, 10 oz each)
  • 3 tablespoons chopped green chiles
  • 2 tablespoons pimentos, chopped
  • 1 1/2 pounds cooked chicken meat (boned and cubed, you need 4 cups total)
  • Salt
  • Pepper
  • 3 cups cheddar cheese, shredded

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Cook the noodles according to package directions and drain.

  • Step 3: In a skillet over medium heat saute melt the butter and then add the onions and cook until tender; stir in soup, chiles and pimentos.

  • Step 4: In a greased 9 x 13 inch casserole layer the noodles, than the the soup mixture and then half of the chicken; repeat layers. Top with the cheese. Bake uncovered for 45 minutes.
