Ingredients

The ingredients are:
  • 1 tablespoon chia seeds (white)
  • 1/4 cup water (60ml)
  • 1/2 cup maple syrup (125ml)
  • 1 1/2 cups rolled oats (135 grams)
  • 1 cup hazelnuts, finely chopped (140 grams)
  • 1/2 cup flour (wholemeal spelt flour, 70 grams)
  • 1/2 cup desiccated coconut (40 grams)
  • 1/2 cup cacao nibs (90 grams)
  • 90 grams pitted dates (6 dates, fresh and finely chopped)
  • 50 grams dark chocolate (melted, bitter sweet 70%)

How to Make

  • Step 1: Preheat oven to 160°C (325°F).

  • Step 2: Place the chia seeds and water in a large bowl and stir to combine and set aside for 10 minutes.

  • Step 3: Add the maple syrup, oats, hazelnut, flour, coconut, cacao nibs and dates and stir well to combine and then press the mixture firmly into a lightly greased 20cm square tin lined with non-stick baking paper.

  • Step 4: Cook for 25–30 minutes or until golden and set aside in the tin to cool completely.

  • Step 5: Using a serrated knife, slice into 8 bars and place on a tray lined with non-stick baking paper and drizzle with the chocolate.

  • Step 6: Place in the fridge for 10 minutes or until set.
