  • 6 cups vegetable broth
  • 3 tablespoons olive oil
  • 1/2 cup onion, minced
  • 1 cup carrots, grated
  • 4 cups potatoes, cubed (peeled)
  • 4 cups spinach, chopped
  • 2 cups zucchini, cubed
  • 3 tablespoons lemon juice
  • FOR TOPPING
  • 4 eggs, hard-boiled and cubed
  • 1/4 cup parsley ,minced
  • 1/4 cup dill, chopped
  • 1 teaspoons salt
  • 1/2 teaspoon pepper to taste
  • 1 tablespoons chives,minced
  • 6 tablespoons sour cream (for serving)

How to Make

  • Step 1: Heat oil

  • Step 2: Saute onions and carrots until golden brown

  • Step 3: Add broth, potatoes and zucchini; cook 30 minutes

  • Step 4: Add herbs and spinach; cook 5 minutes more season. Remove from heat, add lemon juice

  • Step 5: Bowl up, then dollop sour cream

  • Step 6: Hard boiled eggs

  • Step 7: Chives put in chopped
